Executive Chef (Hotel & Banqueting Kitchen) – Stellenbosch Area / CAPE TOWN

 

Work creatively to lead operations within the Hotel Restaurant kitchen and banqueting kitchen, embodying a passion for food, performance and profitability by creating a positive and productive work environment.

 

Examples of duties & responsibilities:

  • To ensure that budgeted Food Cost targets are achieved as per budget and that operational costs are kept to a minimum
  • To ensure that all stocks are ordered to the correct quantities, quality and price.
  • To ensure that all stocks are being kept securely and under the correct conditions to minimize wastage/loss
  • Continuously improving and maintaining operational standards
  • Continuously elevate the food experience in Hotel restaurant and Conferencing while keeping in line with the brand’s food philosophy
  • Creating seasonal menus that are competitive in quality, quantity and value for money
  • Efficient portion control through ensuring that all chefs are trained accordingly and following recipes
  • Ensuring that all stock takes are done timeously and efficiently
  • Ensuring that all invoices are sent to the finance department immediately for processing.
  • Evaluating guest feedback and implement changes where needed.
  • Coordinating, training and managing kitchen personnel.
  • To ensure that all staff is constantly trained to effect pleasing presentation of all dishes.
  • Having daily meetings with the Chefs to ensure smooth running of all kitchen departments.
  • To ensure that all areas satisfy the most stringent hygiene requirements and that staff
  • who are ill or injured receive the correct treatment
  • To regularly hold maintenance checks with the respective Head chefs and
  • Maintenance Managers to ensure that the kitchens are in working conditions.
  • Ensuring that attendance registers are kept daily and efficiently.
  • Ensuring that all staff are fully informed in respect of disciplinary
  • Procedures and the handling of grievances.
  • Identifying training needs of chefs and creating action plans accordingly.
  • Identifying top and bottom performers.

Skills, experience & educational requirements:

  • At least 5 years’ experience in an Executive Chef capacity
  • Degree/Diploma in Culinary Arts/ Chef/ Business Management
  • Willingness to lead, take charge, and offer opinions and direction
  • Able to work under pressure in a fast-paced environment, with the flexibility to adapt to shifting dynamics
  • Strong interpersonal and communication skills with a hands-on management approach
  • Technology proficient with excellent time management and admin skills
  • Sound financial acumen with proven skill in translating ‘the numbers’ to appropriate action
  • Strong food costing, menu and people development skills
  • Positive proactive approach, with proven success at managing a team
  • A creative and innovative thinker, willing and able to inspire teams with a desire to exceed guest expectations at all times
  • As this is a position of honesty and integrity, the successful candidate should possess a positive credit and criminal history as per our client’s requirements

 

Salary – Negotiable depending on experience
